Quick and Easy Vegetarian Thai Coconut Soup

Although this recipe isn't all that authentic, this is a quick and easy vegetarian Thai coconut soup recipe that is very easy to prepare and uses just a few simple ingredients. If you're looking for an easy Thai coconut and vegetable soup recipe, this is the one to try.
Ingredients:
- 3 cups vegetable broth
- 1 cup shiitake or other mushrooms, thinly sliced
- 1/2 cup tomatoes, diced
- 1 cup coconut cream
- 2 tbsp lime juice
- 1/3 tsp salt
- 1/3 tsp red pepper flakes OR 1/4 tsp cayenne pepper, or to taste
- 2 tbsp chopped fresh cilantro
Preparation:
In a large soup or stock pot, bring the vegetable broth to a simmer. Add remaining ingredients, except for cilantro, and allow to cook over medium-low heat for at least fifteen minutes, stirring occasionally.
Remove from heat and stir in fresh chopped cilantro just before serving.
