Broccoli and Tofu in Garlic Sauce Recipe
Broccoli and tofu in garlic sauce is a vegan and vegetarian Chinese-inspired entree that is easy to prepare. Servethis easy and simple vegetarian dish over rice or your favorite whole grain. You really can't go wrong with this simple vegetarian dish.
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients:
- 1 onion, diced
- 4 cloves garlic, minced
- 3 tbsp olive oil
- approx 2 cups broccoli, chopped
- 1 block firm or extra firm tofu, pressed
- 1 1/2 tsp ginger powder
- 1/4 tsp cayenne pepper
- 3 tbsp corn starch
- 1/4 cup soy sauce
- 1 cup water
Preparation:
Cut tofu into 1 inch cubes.
in a large skillet, sautee onions and garlic in olive oil until onions turn clear, about 3-5 minutes.
Add the tofu, ginger, cayenne and broccoli to the pan and continue to cook until broccoli is done, another 6-8 minutes.
In a separate small bowl, mix together the corn starch, soy sauce and water, then add this mixture to the broccoli and tofu. Cook until sauce thickens, then remove from heat.
Serve over rice or whole grains and enjoy!

Vegetarian Thai Coconut Soup
Quick and Easy Vegetarian Thai Coconut Soup

Although this recipe isn't all that authentic, this is a quick and easy vegetarian Thai coconut soup recipe that is very easy to prepare and uses just a few simple ingredients. If you're looking for an easy Thai coconut and vegetable soup recipe, this is the one to try.
Ingredients:
- 3 cups vegetable broth
- 1 cup shiitake or other mushrooms, thinly sliced
- 1/2 cup tomatoes, diced
- 1 cup coconut cream
- 2 tbsp lime juice
- 1/3 tsp salt
- 1/3 tsp red pepper flakes OR 1/4 tsp cayenne pepper, or to taste
- 2 tbsp chopped fresh cilantro
Preparation:
In a large soup or stock pot, bring the vegetable broth to a simmer. Add remaining ingredients, except for cilantro, and allow to cook over medium-low heat for at least fifteen minutes, stirring occasionally.
Remove from heat and stir in fresh chopped cilantro just before serving.

Oh my!!! coconut cream 너무너무 좋아하는데, 피냐콜라다 만들면서 맨날 티스푼으로 한숟갈씩 퍼먹곤 했다.. 그 느끼함과 향이 얼마나 좋던지 :D
